Baked Cod With Cherry Tomatoes, Basil & Shallots

Presenting one of my favorite way to prepare fish! Here is my take on a baked cod with cherry tomatoes shallots and basil steamed to perfection in parchment paper. With all the heavy holiday meals, I was craving something light and fresh. Paired with one of our favorite alcohol-removed chardonnay’s from Fre Wines - a staple in our household since finding out we’re expecting baby number 2.


Baked Cod With Cherry Tomatoes & Shallots

INGREDIENTS

  • 1/4 cup finely chopped shallots

  • 1/4 cup chopped fresh basil,

  • 4-6 whole basil leaves

  • 20 cherry tomatoes, halved

  • 4 tablespoons extra-virgin olive oil

  • 1 lb cod filet

  • 1 tablespoon salt

  • squeezed half lemon

INSTRUCTIONS

  • Chop the basil and finely chop the shallots

  • Slice the tomatoes in half

  • Line a baking pan or sheet with parchment paper

  • Place in the sliced tomatos, basil and shallots on the base of the pan

  • Place the cod in the center of pan

  • Drizzle with olive oil

  • Sprinkle with salt

  • Squeeze lemon

  • Wrap parchment paper and roll the paper to hold and cover

  • Place in over for 15-20 minutes at 400 degrees

  • Remove and serve. Top with whole basil leaves for garnish and pour yourself a glass of wine.
