• 1lb Cod

• 6 Mi Rancho Mini Mama’s Street Taco Flour Tortillas

• 20 Oz Vegetable Oil

• 1 Mexican Beer – I used Corona

• 1 cup All-Purpose Flour

• 1 Egg

• 3 tbsp Salt - 1 tsp for the batter and 2 tsp for the slaw.

• 1/4 cup Sour cream

• 2 tsp chili powder - 1 tsp for the cream taco sauce and 1 tsp for the batter

• 1 tsp onion powder

• 1/2 head Red Cabbage

• 2 Limes – 1 For the slaw and 1 for garnish.

• 1 bunch fresh Cilantro

• 2 tbsp Honey

• Guacamole

THEN;

1. Cut the cod into strips and sprinkle the Fish with salt.

2. Combine the flour, 1 tsp salt, egg, and beer in a bowl and mix. Make sure that there are no lumps remaining.

3. Add the oil to a Dutch Oven or skillet filling half way and heat to 350 degrees F. Dip the fish into the batter and allow any excess to drip off. Drop the battered fish into the oil and fry moving around to cook both sides until the fish begins to darken, about 5 minutes. Remove and place the fish on a rack to drain.

4. Thinly slice and chop the cabbage, add to a bowl. Add the juice of 1 lime, 1 tbsp of chopped cilantro, 2 tsp of salt, and 2 tsp of honey. Toss together to ensure everything is evenly coated.

5. Add the sour cream, onion powder and chili powder to a small bowl and mix together.

6. Assemble the tacos by adding guacamole and chili cream sauce to the tortillas. Top with the fried fish then cabbage slaw and enjoy!
