Green Goddess Gazpacho

Ingredients 

• 2 large cucumbers, cut into chunks. Set aside a few thinly sliced cucumber for garnish

• 1 cup plain Greek yogurt

• 2 avocados, pitted

• 1/2 lemon juiced 

• 1/4 teaspoon lemon zest

• 1 clove garlic, chopped

• 2 scallions, chopped

• 3 tablespoons chopped fresh dill. Save a little for garnish

• 10 large basil leaves

• 1 jalapeño, seeds removed

• 2 tablespoons extra virgin olive oil

• 3 tablespoons primal green goddess dressing

• salt and pepper to taste

• 2 tbsp thinned out Greek yogurt and 2 tsp olive oil to drizzle and finish 

Instructions

1. Combine cucumbers, Greek yogurt, avocado, lemon zest, lemon juice, garlic, scallions, dill, basil, jalapeño, olive oil, and apple cider vinegar in a food processor or blender. Blend until smooth and creamy. Season to taste with salt and pepper, and blend again to combine. Chill and serve.

2. Chill and finish with thinly sliced cucumber, chopped fresh dill, a drizzle of extra virgin olive oil, and a drizzle of thinned out Greek yogurt to serve.
