Homemade Family Style Gnocchi With Homemade Roasted Cherry Tomato Sauce

For the Gnocchi:

1 cup Whole milk ricotta cheese

2 cups Flour: “00” flour or Semolina Flour.

3 Egg yolks

1 cup freshley grated Parmesan cheese

2 tablespoons salt

2 tablespoons olive oil

THEN;

1.Pile the flour on a clean, dry work surface.

2.Make a well in the center of the flour pile.

3.Crack the egg yolks into the center.

4.Add in the ricotta, parmesan, olive oil and salt.

5.Mix in with hands or a dough scrapper until combined.

6.If the mixture is tight, dry or crumbly add a little olive oil to bring it all together.

7.Start kneading the dough and keep folding and kneading for 5-10 minutes until smooth.

8.Cut the dough then transfer it to a lightly-floured cutting board and sprinkle the dough with lightly with flour.

9. Using a knife or scrapper, cut the dough into even pieces.

10.Then using your hands, gently roll out each wedge out into an even log, approximately 3/4-inch wide.

11.Cut each log into individual bite-sized gnocchi squares.

12Lightly dust the gnocchi with flour once more and give them a quick toss so that they are all lightly coated with flour. (This will help prevent them from sticking together.)

13.Carefully transfer them to your pot of boiling water. Cooking for a few minutes.

14.When they start to float, taste one to see if consistency is right and the gnocchi is cooked all the way through.

15.Strain and toss with your sauce in a pan.

16.Shave on fresh parmesan and top with basil for garnish.

For the Sauce:

2 packages red cherry tomatoes

4 cloves of garlic

1/2 yellow onion

2 bunches of basil

2 tbsp Salt

3 tbsp olive oil

THEN;

1.Remove tomatoes from the vine and place on a sheet pan.

2.Add peeled garlic, basil and salt.

3.Put in over at 350 degrees for 40 minutes or until tomatoes are roasted.

4.Finely dice the onion and add to a sauce pan with 3 tablespoons olive oil.

5.Stir and let simmer over low heat stirring until soft and translucent.

6.Remove roasted tomato pan and add to the pot with onions.

7.Blend using an emulsion blender on low speed.

8.Pour over the gnocchi and enjoy!
